As with most types of grills, hibachi models have a large cast iron grate on one side that is designed to cook the meat directly. They will often also have a spit plate as well.

The hibachi grill has been adapted into many different styles. Some are even designed with the ability to spit, roast or do charcoal grilled cooking. There are even some models that work just as well as a barbecue grill, but feature the convenience of cooking directly on an indoor electric grid. These grills are known as offset hibachi grills. These are most commonly seen in homes in rural areas where there is usually no access to outdoor propane. Some brands include cast iron cooking grids with the bases and some include a separate grate that is designed to cook with hibachi gas. Many include a Chimney starter accessory.

A hibachi grill is easy to maintain. There are very few parts that require maintenance other than the occasional cleaning of the grate. Some people like to use a small pair of tongs when cooking with bbq gas and others prefer to use a brush to clean off the coals. Many people prefer to use a fire extinguisher when they are using any type of fuel source. If you do not have a fire extinguisher, a bottle of water and some soap and water in your kitchen can usually put out any minor fire accidents. In case of major accidents, however, it is wise to have a fire extinguisher nearby in case of an emergency.

A hibachi grill has two standard cooking sizes. The larger size is for cooking food that will be served as sushi or other food items that are large enough to fit on one of the grills' bigger burners. The smaller size is usually for hot dogs and smaller plates.

The best hibachi grills will include either a gas or electric ignition. Some people prefer to use natural gas while others use propane. It is best to find a grill with both types of ignition. Gas is more commonly available but electric has become more efficient and has lower operating costs.

Some hibachi grills offer a choice of flat or ribbed grates. Flat grates allow for easy cleaning and will prevent slop during grilling. Ribbed grates are easier to flip than flat grates and will prevent burning of the vegetables underneath. Both of these features are important when it comes to preparing foods that need to be cooked quickly.
